How to make a Ugandan Rolex!

No, it has nothing to do with watches, Rolexes are a Ugandan street food with a Chapati, Onions, Peppers and Egg – and very tasty!

Its name is derived by saying “roll of eggs” quickly in a Luganda accent, though they are better known as Rolexes rather than as rolls of eggs. A Rolex might be compared to a breakfast-burrito or rolled omelette. In Uganda, this is a typical greasy street-vendor offering available at busy intersections at a cart with an umbrella (for shade), cutting board, and charcoal cookstove with rounded metal hot-plate.

The basic idea of a Rolex is an egg omelette cooked cabbage, onion, carrot, pepper and sometimes with other ingredients, which is then wrapped in a chapati

The Directions

Rolex is a popular Ugandan street food in Uganda, combining an egg omelette and vegetables wrapped in a chapati.

Instructions
 

  • Finely chop cabbage, onion and pepper
  • Grate the carrot and cut the tomato
  • Crack 2 eggs into a bowl
  • Add the vegetables and a pinch of salt into the eggs bowl, then Whisk to combine the ingredients
  • Add vegetable oil onto a hot pan
  • Pour the Mix onto a hot pan and Carefully flip the egg and vegetable mix
  • Once the eggs are cooked, place the chapati on top of the egg/omelette and turn it the other way round.
  • Take the chapati and egg/omelette out onto your working surface, Add tomatoes, salt and chilli to taste.
  • Roll it up and serve.
